Berry Trifle

This so easy to make, light and delicious.

For 6 servings…

You need:

  • 50g  almond biscuits
  • 50g chopped hazelnuts
  • 400g sweet quark (or yoghurt)
  • 200g berries (fresh or frozen)
  • a splash of Amaretto liquor
  • some amaretti biscuits for decoration

Here it goes:

Put the almond biscuits in a freezer bag and squash them with a rolling pin. Then add the chopped hazel nuts. Put a little bit of the biscuit nut mix in a glass, put a few drops of amaretto liquor on it, then cover it in quark and add berries. Then do the same thing again: biscuits, liquor, quark and berries. Put the rest of the  quark on top using a piping bag. Put a raspberry or some berries on top and sprinkle everything with squashed amaretti.

Voilà.

Going Green (Juice)

After being sick for three weeks in a row, I decided I had to boost my immune system and that it was about time I had some vitamins in my system. So I got myself a new toy  (juicer) 😉

By now I am addicted to juicing and I couldn´t leave my house in the morning without my freshly juiced green in my bag.

I feel so much better and have all that energy and funnily enough it changed my whole way of nourishing me. Suddenly I have cravings for avocado salad, fresh tomatoes and mozzarella, sage risottos, crunchy broccoli etc…  (recipes to come)

  • Kale
  • Spinach
  • Romano salad
  • Celery
  • 1 green apple
  • 1 cucumber
  • A few white grapes
  • ginger
  • Maca and/or guarana and/or spirulina

Enchiladas with Mole

Hello there, I was at my sister’s for a week to help her out a little bit. Lucky me got to do a lot of cooking so I will share a few recipes with you guys…. 😉

You need:

  • 8 fajitas
  • 500g of chicken
  • sweet corn
  • 1 can of peeled and minced tomatoes
  • 500ml of chicken stock
  • 1 chopped onion
  • 30-40g of dark chocolate (you could also use coacoa)
  • grated cheese (ex: cheddar)
  • salt & pepper
  • cayenne pepper
  • cinammon
  • some cloves

Here it goes:

Put some butter (or oil) in a medium sauce pan at medium heat. Put in the chopped onion and stir until you stop crying (private joke!). Add the tomatoes, some salt and pepper, some cayenne pepper (you could also use tabasco), cinammon and a few cloves. Now you can start adding little bits of chocolate and stir until they are completely dissolved. Add the chicken stock and let it reduce a bit for a while. When you have a creamy texture add some crème fraiche for the colour.

In the meantime, chop up the chicken into little pieces and put it with some butter, salt & pepper, in a frying pan until they get golden. Take out a gratin form, take a fajita, put in the chicken and some sweet corn and roll it up. Do so until you have no more chicken and no more fajitas left. Pour the mole on top and sprinkle grated cheese on it.

Now put it in the preheated oven at 180°C and wait till the cheese gets all golden and crispy.

This normally serves 4 people… or two girls and a very hungry brother-in-law 😉
