Rhubarb Apple Crumble

Because it is rhubarb season and because I had lots of other stuff to do today I didn´t feel like doing. J

crumble

You need:

  • 400g of Rhubarb
  • 2 big apples
  • ½ cup of flour
  • 50g of butter
  • Sugar
  • Vanilla
  • Cinnamon

Here it goes:

Preheat the oven at 200°C. Cut the rhubarb and apples into tiny cubes. Put into a gratin or pie form. Spill sugar, cinnamon and vanilla on top (I cheated, I used cinnamon sugar). Mix the flour with the butter, add sugar, vanilla and cinnamon to the mix. Mix it until you get little crumbs or a “wet sand” kind of texture. Sprinkle the batter onto the fruit cubes and put into the oven for around 30 minutes.

Tip: Serve warm with custard or a spoon of vanilla ice cream.

Berry Trifle

This so easy to make, light and delicious.

For 6 servings…

You need:

  • 50g  almond biscuits
  • 50g chopped hazelnuts
  • 400g sweet quark (or yoghurt)
  • 200g berries (fresh or frozen)
  • a splash of Amaretto liquor
  • some amaretti biscuits for decoration

Here it goes:

Put the almond biscuits in a freezer bag and squash them with a rolling pin. Then add the chopped hazel nuts. Put a little bit of the biscuit nut mix in a glass, put a few drops of amaretto liquor on it, then cover it in quark and add berries. Then do the same thing again: biscuits, liquor, quark and berries. Put the rest of the  quark on top using a piping bag. Put a raspberry or some berries on top and sprinkle everything with squashed amaretti.

Voilà.

How to avoid cravings

Hello everybody. I hope you enjoyed your holidays as much as I did. I had my entire family over, this is why you haven´t heard from me in a while. A two-and-a-half-year old can keep you quite busy.

Anyway, with  everybody gone I can go back to my normal morning routine: hot lemon, juicing and looking at pretty pictures on Instagram.

I don´t know why, but I love doing that in the morning; inhaling my coffee and looking at inspiring pictures… until this morning.

This morning I was faced with the picture of a plate with a mango and three grapes and the title said: #lunch

LUNCH??????

Are you kidding me???

In my world this doesn´t even qualify as a snack!

Speaking of snack, I started looking at more pictures of this user and found a lot of lovely pictures with “healthy snacks” to “avoid afternoon cravings”.

Within a nano second, this is what came to my mind:

  1. Obviously you have cravings, all you eat is fruit and soy milk…
  2. Shit! I forgot to prepare my goji berries for work
  3. Ballet. I really don´t miss ballet. Ballet was that time of my live where I was surrounded by girls with eating disorders who considered an apple as actual lunch. How the hell are you supposed to train 30 hours a week with only apples and Weetabix in your stomach? And you can´t even imagine that psychological pressure that comes with “just” eating an apple.
  4. Boy, do I love butter and cream. (the salty butter, very important detail)
  5. Speaking of eating disorders, how healthy can it be to starve your body?
  6. Boy, do I get cranky if I don´t get my food on time…
  7. Dear instagramers, if you keep doing this, in 10 years you´ll look haggard, probably have fructose intolerance and start to feel your kidney drying up like prunes.
  8.  I think I´ll have pizza for lunch…

Anyway, I am a big fan of healthy meals, superfoods and anything that does me good.

But like everything in life, you need to find the perfect equilibrium. It´s not called a balanced diet for nothing.

So to everybody out there, your body will tell you what it need anyway. Just learn to listen to it and you´ll be able to keep it as healthy as it can be.

But this is just bullshit!

So stop craving and start eating!

Martinique

I have finally managed to go on holidays!!!! Wohooo

2 weeks of total bliss, relaxation, meetings with my granny (yep, she lives in Martinique) and a hell of a lot of food and rum.

Rum comes in so many variations in Martinique, there are at least 10 – 15 distilleries on that tiny island. You can drink it pure like a matured whiskey, with exotic juices, aromatized with ginger, vanilla or tangerine peels (Shrubb) or the classic ti punch: rum, lime, sugar cane

We had this really lovely studio in the south of the island where there are only white sand beaches. And because we came off season, we had the whole beach to ourselves, as locals hardly ever go to the beach. I just loved trying out recipes I would never ever have thought of, like papaya salad, shark soup, boudin, accras or a typical local dish “Féroce” (translation: fierce): mashed avocado, manioc flour, chilli, oil, salt and pepper, cod

We spend the second week in the capital Fort-de-France and went to visit the North side of the island which has black sand beaches because of the volcano Montagne Pelée. There are so many things to do in Martinique that, should you ever consider going there on holidays, you need at least 3 weeks in order to adapt, relax, visit all the sites that are to be visited, swim, try out the local cuisine or go diving. But I will go back there, I haven´t had enough red snapper yet. 😉
